My Mom is lucky enough to work at a company where there are many great cooks and bakers. She is always bringing home leftovers from a lunch or holiday party along with the recipe. Most recently she told me about these potato chip cookies. I was like that sounds interesting and she said that it was a must bake for the holiday season. It was tempting enough, but unfortunately I forgot the recipe at home. Oops. So I looked it up online and there it was, potato chip cookies by the one and only Martha Stewart. (http://www.marthastewart.com/905039/potato-chip-cookies). I was so excited because my only hope in life is for one day to be like her (sans the whole jail thing and probably other things too). Though she is so confident and quite the bad ass while at the same time a great home maker, cook, crafter, and business woman. I would like to think that I am maybe 25% there haha. So I decided to test out these cookies while watching one of my new favorite shows “Two Broke Girls”. They in some weird way remind me of myself and both hope to be like Martha Stewart one day. So I made the cookies while watching the show, preoccupied and having fun. Unfortunately, when I finished, I was disappointed, but it was not Martha’s
fault. I had to replace the pecans because I was too cheap to buy them and could not use walnuts (a good substitute) because my husband is allergic. Therefore, I used the peanuts in my pantry, which was probably not the best choice. I also was a little distracted by the broke girls on tv that I may or may not have added too many chips. Oops. Overall, I recommend trying this recipe and may even try it again myself the right way. They were pretty fun to make, but make sure you have enough money for those pecans because this broke girl could not afford them and I suggest not using a cheaper nut.
