During the last hour I started making the baked potato with a twist. I found this recipe via Pinterest claiming it was the “most ah-mazing roasted potatoes”. Well they absolutely were not. They were alright, but I would have rather just saved my time and micro waved it. Actually, I can’t say they took me all that long to make, but it just wasn’t worth it. After I cooked the potato the way the recipe suggested I still needed to add extra accoutrements to make it enjoyable. Overall, I must say I was pleased to eat something other than holiday food. The soup went over really well with my husband and between the two of us we barely had any leftovers. (Embarrassingly). I would just suggest making a basic baked potato with the soup and don’t bother with any fancy recipe side dishes.
