So then why do we make the same mistakes? Is it because we try to improve but can’t figure out how? Sometimes we just need to ask for help. Even though it may feel uncomfortable and scary we just have to put ourselves out there. Besides, how can we improve on our own? Therefore, I am asking you all for help. I have realized that although I am a decent baker I am having a difficult time at making cakes that
need to be refrigerated (ice box cakes, coconut cream pies, etc.). I made the strawberry refridgerator cake a few months ago. It was edible but I personally did not like the outcome. Then I tried a coconut cream pie and it was an ultimate fail. It did not even set. I went back for the third time to try another refrigerator cake; a creamy orange cake I found at http://trickschefs.com/showthread.php?tid=1265. I thought it was really similar to the strawberry cake I previously made and that maybe this time it would come out ok. Well again it was just alright. This time I felt that I made the cake part ok, but totally screwed up the topping, which was opposite from my fail at the strawberry cake. So I am asking for tips in making refrigerator cakes. Are there any recipes out there that are so easy I can’t mess up? I have posted the orange cake recipe because although I messed up it was still somewhat tasty and if made appropriately would probably be quite delicious.
