searching around the store I became frustrated and replaced the spreadable goat cheese with the Laughing Cow’s spreadable cheese (the French onion one) and luckily it worked. I am also very picky about my pasta and have been called by multiple people (especially my husband) a pasta snob. I prefer eating fresh pasta, but if I am going to use something from the box I have been totally liking Lidia’s pasta and DeCecco.
This time, I used Lidia’s fettuccini. When I finally got home I prepared the meal all by myself! I whipped out my Calphalon skillet and roasted the vegetables: shallots, garlic, and zucchini while the water was boiling for my pasta. After the vegetables were tender I added the tomatoes. I used fresh Roma
tomatoes (which are my favorite) and they worked excellent in this fresh Italian dish. After a few minutes I
removed the skillet from the heat and added my Laughing Cow cheese. I was a little nervous about this change but I was feeling confident. I found that it was a nice touch. This recipe called for a fresh basil topping and if you are into Italian herbs then totally go for it; unfortunately I dislike most Italian seasoning – I know, blasphemy, so I left it out and it is fine to do so. I then plated up, put the fettuccini on first and added the vegetable sauce. It looked fabulous. Then I added additional parmesan cheese on top and it was a great extra touch. Even though this was not Giada’s recipe I really felt like her making it because it
was such a healthy and fresh Italian dish that would please everyone. When my husband called to tell me he was on his way home from work he was surprised to hear that I had not only ate dinner, but that I made it on my own. He was really excited to come home from work to a great meal on a Friday. So needless to say, I highly recommend this dish because it is super easy to make and not only is it fresh, but it is also healthy and delicious too. Plus my finished product looks just like the original picture! Bon Appétit!
