For the baked potato, I highly recommend Alton Brown’s perfect baked potato recipe. It’s the only way I make it. You can find the directions here: http://www.foodnetwork.com/recipes/the-baked-potato-recipe.html Though, if you are low on time, cook your potato in the microwave and sprinkle some kosher salt and olive oil on top before adding the toppings.
First make your baked potato. Either microwave or if you have time, make it Alton Brown style. (Don’t forget to poke holes and sprinkle kosher salt and olive oil over it before you cook). While potato is cooking prepare your tomatoes. Heat olive oil in small skillet over medium heat and cook tomatoes for 5-8 minutes until desired doneness (I usually cook mine for a long time because I like them super juicy). When potato is finished, slice in half and pour on a little olive oil. Next, spoon on sour cream, sprinkle on cheese and add the tomatoes and crushed black pepper. Enjoy!!
