Prep Time: Forever– About an hour – but may take less time for a more skilled individual.
Cook Time: 45 Minutes (for the chicken).
Clean Up: Still cleaning up the dressing off of my food processor, but really about 15 minutes.
Total Time: Way too long.
1 Red Pepper – Chopped
1 Medium bag of shredded carrots (about 1 cup)
1 Zucchini – Chopped
½ Cup of Broccoli – Chopped
½ Cup Green Onion – Chopped
3 Boneless, Skinless Cooked Chicken Breast – Chopped
1 Box (8 oz) Whole Grain Linguine
Optional: Fresh Basil & Cilantro
5 Tbs. Soy Sauce
2 Tbs. Water
2 Tbs. Peanut Butter
2 Tbs. Canola Oil
1 Tbs. Vinegar
½ Tbs. Honey
1 Tbs. Ginger
1 Clove of Garlic
1 Tsp. Sugar
1 Red Chili Pepper – Remove Seeds and Ribs
1/3 Cup Peanuts
First, Bake Chicken while boiling water for linguine. Cook linguine based on directions on the box. Chop up salad vegetables and place in large bowl. When Chicken is finished baking, (no pink on the inside) chop up and add to large bowl with vegetables, then add the cooked linguine. Mix together. Next, puree all dressing ingredients in a food processor until smooth and creamy. Pour over salad and mix well. Enjoy.
