Prep Time: 30 Minutes (mostly cutting up the apples, I put them in my food processor)
Cook Time: 40 Minutes
Clean Up Time: 20 Minutes
Total Time: About an hour and a half
For the Apple Cake:
1 1/2 cups all purpose flour
1 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup canola oil
1 tsp vanilla
1 1/2 cups granny smith apples chopped (about 3 apples makes 2 cups)
1/2 cup pecans or walnuts, chopped (optional – I did not use and tastes great without)
For the Brown Sugar Glaze:
1/2 cup packed light brown sugar
3 Tbs butter
1/2 tsp vanilla
1 Tbs heavy cream
Heat oven to 350 Degrees F. Grease an 8-inch pan. (I love the square pan for this cake). Whisk together flour, sugar, baking soda, salt and cinnamon in a medium bowl. Then in a second bowl or stand mixer, mix eggs until light in color. Add oil and vanilla, beat well. Add the flour mixture one cup at a time, then stir in the apples and nuts (if using). Pour batter into pan and bake for 40-45 minutes or until inserted toothpick comes out clean.
Next place the hot cake on a wire cake or leave in pan for ease of use and transportation. While still hot, prepare the glaze.
To make the glaze, combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil which takes about 3-5 minutes. While hot, pour glaze over cake. Let cool before serving. Enjoy.
