1 Small Bag of Fingerling Potatoes
3 Tbs EVOO
1 Tsp Parsley
Preheat oven to 450. Rinse potatoes and boil in a large pot of water. Cook until you can stick a fork through the potatoes. Prepare baking sheet and lightly spread 1 Tbs of EVOO on the sheet. Then strain the potatoes and evenly spread over baking sheet. Next, take a fork, and press the fork on top of the potatoes until they burst. When finished sprinkle with the rest of the EVOO, parsley and sea salt and pepper to taste. Bake for 20-25 minutes. You can serve as a side to breakfast food or any protein meal.
