Boil water in a large pot and cook angel hair pasta according to the instructions on the box. While pasta is cooking, pour olive oil in a medium pan and cook over low heat. Next, add minced garlic and red pepper flakes. Cook for about one minute, or until garlic softens. Add mushrooms and season with salt. Cook for about 5 minutes or until mushrooms are tender and most of the liquid evaporates. When finished, drain pasta and pour in a large bowl. Pour mushroom mixture over pasta and toss. Garnish with fresh parsley and parmesan cheese if desired.
If adding onion – add with the minced garlic and red pepper flakes and cook for about 2 minutes or until the onions are translucent in color. Then add the mushrooms and salt.
